JOB DESCRIPTION: Supports the Director of Beverage and Director of Cocktail Services in the development and implementation of the strategic plan and vision for the beverage department consistent with the company’s objectives. Directly communicates with the Director of Beverage and Director of Cocktail Services on all beverage service and operation issues. Works with the Director of Beverage and Director of Cocktail Services on implementation of new products, brand training and all staff sales incentive programs. Provide leadership, discipline and coaching to all employees and fellow managers to ensure proper expedition of cocktail recipes, bar cleanliness and service standards. Directly oversee the training and adherence to Aria service standards of all bartenders and bar apprentices. Facilitate classroom and technical training to all employees and beverage management team. Provide leadership and direction in the execution and measurement of guest service standards within beverage operations to ensure continued growth and profitability. Ensure all policies, procedures and practices are consistent with the company’s core service standards and brand attributes. Work as a team, assisting all guests’ and employees’ needs and inquiries Effectively communicate with management, bartenders and service staff in order to fulfill and address any issues or needs requested by guests and or other employees. Monitor guest reactions and confer frequently with service staff to ensure guest satisfaction. Resolve guest complaints, ensuring guest satisfaction. Portrays a professional, eloquent and charismatic image when interacting with all media and industry representatives. Maintain complete knowledge of: all liquor brands, beers and non-alcoholic selections available in outlets, the particular characteristics and description of every wine/champagne by the glass and major wines on the wine list, designated glassware and garnishes for drinks, all bar menu items, preparation method/time, ingredients, sauces, portion sizes, garnishes, presentation and prices. Maintains active market research on latest beverage trends, products and technology. Is actively involved with the corporate beverage program and vendors. Assures compliance of all corporate beverage program initiatives. Possesses extensive knowledge of menu development and completion. Creates, develops and implements new beverage menu items, tests and writes all recipes for all bars and lounges. Assists Special Events and Catering and Banquets Departments with developing special beverage menus for functions; meets with clients as requested. Inspect bar set-ups; check for cleanliness, neatness and agreement to departmental standards; rectify deficiencies with respective personnel. Maintain complete knowledge of and comply with all departmental policies, procedures, and standards. Maintain complete knowledge of correct maintenance and use of equipment. Order supplies through the IP System and Purchasing. Maintain cost control through efficient management of products, inventory and warehouse ordering. Understands and manages Profit & Loss statements and general business practices of beverage operations. Manage POS pricing/maintenance issues to ensure checks can be processed correctly and to control beverage cost. Monitor and maintain cleanliness, sanitation and organization of assigned work areas. Maintain complete knowledge of bar outlet layouts, table/seat/station numbers, proper table set-ups, room capacity, hours of operation, price range and dress code. Maintain complete knowledge and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and drunk driving. Check storage areas for proper supplies, organization and cleanliness Ensure that transfer slips and spill sheets are filled out and distributed in accordance with departmental standards. Establishes PAR levels for supplies, liquor, beer, wine and equipment Inspect quality and amounts of garnishes, ensuring agreement to departmental standards. Review sales and beverage costs. Ensure that staff report to work as scheduled, documenting any late or absent employees. Assign work and side duties to staff in accordance with departmental procedures. Conduct pre-shift meeting with staff and review all information pertinent to the day's business. Inspect grooming and attire of staff; rectify any deficiencies. Constantly monitor staff performance in all phases of service and job functions, ensuring that all procedures are carried out to departmental standards. Check the pick-up station and side stations, ensuring agreement to standards of cleanliness, supply of stock and organization. Monitor and handle problems with intoxicated guests and/or altercations Access all functions of the POS system in accordance to specifications Assist staff with expediting problem payments. Ensure all cashiering procedures are processed in compliance with Accounting standards. Complete all paperwork and closing duties in accordance with departmental standards. Ensure that all Bars are secure when not open for business. Perform other related duties as necessary. JOB REQUIREMENTS: Required: At least 5 years previous experience in a high volume bar environment. At least 5 years of experience in bartending. At least 3 years experience with beverage menu creation. Excellent knowledge of beverage and wine service. Detailed knowledge of spirits, beer, wine and food. Certifications in Mixology/Wine programs and or seminars. Complete knowledge of health, sanitation and safety regulations. Working knowledge of several POS systems and operations. Eloquent in Public Relations, advertising and public speaking. Excellent organizational skills, to be able to function under time constraints, and deadlines with attention to detail. Effective listening abilities and be able to make strong judgment calls. Ability to work as part of a team in a high-volume environment. Strong service technique and attention to detail. Strong training and facilitation skills. Able to work a flexible schedule and travel if necessary. Excellent customer service skills. Able to lead and mentor a team. Have interpersonal skills to deal effectively with all business contacts. Professional appearance and demeanor. Work varied shifts, including weekends and holidays. High school diploma or equivalent. Able to effectively communicate in English, in both written and oral forms. Preferred: Bachelor Degree or equivalent work experience. At least 3 years supervisory experience. Previous experience managing employees using a Collective Bargaining Agreement. Previous experience working in a similar resort setting.
